It's just a short post but one I can't wait to share. I've been travelling for the past few weeks - what originally was meant to be a one and a half week trip has extended into nearly a month away from home. Despite the challenging, surprising times - it's been enjoyable. And I've gotten to experience and share many incredible moments and memories with many new and old friends.
This post follows on with the theme of new friends. It's a collaboration between myself & Noha. Her blog, Matters of the Belly, is one I've been keenly following for a while now. I just love her recipes and eye for photography. And after chatting online for what seems like ages, we decided to meet.
We got to know each other over an afternoon of brioche and almond croissants, tea and coffee. And we had an instant connection. She's so incredibly genuine, and kind, beautiful too. So we decided to bake something together. We had a stack of ideas and flavours of what we wanted to create and decided upon this little Salted Honey and Orange Blossom Naked Cake.
It's so hard to say not to making a cake, especially one as pretty and perfect as this. (and doesn't Noha's photography just set it off!)
It's such an incredibly delicious cake. And I just love the photos. The cake is a vanilla honey flavoured sponge, and it's as moist as anything. It's three layers high and comes together so quick. The filling is a rich honey buttercream that's also flavoured by just a hint of orange blossom water.
We couldn't stop eating it - and the batter too. It's slightly on the sweet side but the addition of pink himalayan salt to the buttercream balances out all the sweetness. It's the perfect flavour foil against all those delicious cake layers.
This cake is our idea of perfect. And I'm elated to have formed a new friendship with Noha, our connection is unusually natural and I feel like I've known her forever. And we can't wait to have another baking day together too, so many recipes and ideas brimming for the future.
Oh, and I also can't wait for her to make me falafel again! I don't think I can deal and just wait for the recipe to be posted on her blog. They seriously were the best I'd ever had the pleasure of eating.
